From the Vineyard is our wine initiative, celebrating the finest examples of English winemaking.
This month, we are delighted to showcase Roebuck Estate, an award-winning English sparkling wine producer based in Petworth, West Sussex.
Our Head Sommelier says:
‘'I am excited for this June edition of our initiative, 'From the Vineyard.' Roebuck Rare Expression N19 truly embodies the essence of 'Terroir.' Nestled on gentle south-facing slopes near their Roman villa in West Sussex, this vineyard nurtures grapes from the unique Block N19, where only Pinot Noir is planted, fostering a remarkable connection to the land.’'
‘'The result is rare (only 2500 bottles produced), yet when it happens, it becomes something extraordinary. Perfectly balanced between richness and elegance, the bouquet reveals caramelized apple and dried apricot, complemented by the toasted sweet character from generous bottle aging, which adds notes of almonds, honey-roasted peanuts, and freshly baked pastry.’'
A selection of Roebuck wines will be available by the glass throughout the month.
On Thursday, 12th June 2025, we are thrilled to welcome Julien Le Pevedic, Regional Sales Manager at Roebuck, for an exclusive complimentary tasting of their wines. Guests with a dinner reservation that evening are invited to join this special experience.
At their core lies a passion for crafting exceptional, vintage sparkling wines, each one a generous expression of the growing season in which it was made. Every bunch is hand-harvested with care and gently whole-bunch pressed to capture only the finest juice, ensuring elegance and character in every bottle. Much like the graceful roe deer that roam their vineyards, they aim to leave only the lightest footprint on the land with sustainability, conservation, and biodiversity at the heart of their philosophy.
In addition, only during the month of June, we’ll be serving the Rosé de Noirs 2018 with our afternoon teas, and crafting a unique cocktail featuring their exceptional wine.

Dining at Gravetye Manor is an exquisite experience, blending Michelin-starred cuisine with breathtaking garden views. Our new Executive Chef Martin Carabott, showcases seasonal ingredients, sourced from the estate’s own kitchen garden, ensuring fresh, innovative dishes.
Feast in the Vines takes place on Saturday, 2nd August with each ticket including a mouth-watering banquet prepared by The Sussex Chef, a tour and a glass of award-winning vintage sparkling wine. The experience will take place at Roebuck’s home vineyard, close to the picturesque market town of Petworth in West Sussex. With magnificent views towards the South Downs, it is the jewel in Roebuck’s crown and home to their oldest vines, planted in 2006, with classic Champagne varietals Chardonnay, Pinot Noir and Pinot Meunier leading the way and bringing elegance and finesses to Roebuck’s highly celebrated collection of vintage sparkling wines.
